Roast turkey with celery - a healthy way to serve the traditional Christmas or Thanksgiving dish.

Ingredients
 

  • 2 celery hearts
  • 4 garlic cloves
  • 1 3/4 lb turkey breasts
  • 4 rashers smoked lean bacon
  • 1 tbsp oil 1/2 tsp cinnamon
  • salt and freshly ground black pepper
  • 4 tbsp brandy

Instructions

  • Preheat the oven to 375°F (190°C) Gas Mk 5.
  • Cut the celery hearts into thin slices.
  • Grease an ovenproof dish and put in the celery slices and the whole garlic cloves.
  • Roll together the turkey breasts and secure with string.
  • Place on top of celery, then arrange the bacon slices on top of the turkey.
  • Sprinkle all over with oil, cinnamon, salt and pepper and cook for 1 1/4 hours basting frequently.
  • When cooked, remove from the oven and sprinkle with brandy which has been set alight.
