Roast Turkey with Celery
Roast turkey with celery - a healthy way to serve the traditional Christmas or Thanksgiving dish.
Ingredients
- 2 celery hearts
- 4 garlic cloves
- 1 3/4 lb turkey breasts
- 4 rashers smoked lean bacon
- 1 tbsp oil 1/2 tsp cinnamon
- salt and freshly ground black pepper
- 4 tbsp brandy
Instructions
- Preheat the oven to 375°F (190°C) Gas Mk 5.
- Cut the celery hearts into thin slices.
- Grease an ovenproof dish and put in the celery slices and the whole garlic cloves.
- Roll together the turkey breasts and secure with string.
- Place on top of celery, then arrange the bacon slices on top of the turkey.
- Sprinkle all over with oil, cinnamon, salt and pepper and cook for 1 1/4 hours basting frequently.
- When cooked, remove from the oven and sprinkle with brandy which has been set alight.
