Instructions
- Place the peas into boiling salted water, with a bundle of mint stalks; bring back to the boil and cook steadily for 4 minutes.
- Discard the mint stalks, drain the peas and serve in a vegetable dish. Place the blanched mint leaves on top of the peas, each leaf denoting one portion.
