  • 2.2 lb peas
  • 20 button onions
  • 1 cabbage lettuce
  • 2 tsp sugar
  • 8 1/2 floz white stock
  • 2 oz butter
  • salt


  • Shred the lettuce coarsely, place with the other ingredients into a saucepan and bring to the boil.
  • Cover with buttered greaseproof paper and a lid and braise in the oven at 180°C for 30 minutes.
  • Lightly thicken the liquid by adding knobs of butter or beurre manie, removing the pan from the heat and shaking to mix in and serve.
