  • 1 cos lettuce
  • 1 oz fresh mint leaves
  • 4 to matoes
  • 1/2 cucumber peeled
  • 4 tbsps olive oil
  • juice of 3 lemons


  • Remove the outer leaves from the lettuce, wash gently and dry. Roughly chop and place in a bowl.
  • Trim the centre leaves and reserve. Chop the mint leaves, tomatoes and cucumber.
  • Add to the chopped lettuce. Mix the oil and lemon juice together and pour some into a small bowl.
  • Place the bowl in the middle of a large plate and stand the centre leaves in the bowl.
  • Pour the remaining dressing over the lettuce and mint mixture, toss, then spoon around the bowl on the plate.
