Mint And Lettuce Salad
Ingredients
- 1 cos lettuce
- 1 oz fresh mint leaves
- 4 to matoes
- 1/2 cucumber peeled
- 4 tbsps olive oil
- juice of 3 lemons
Instructions
- Remove the outer leaves from the lettuce, wash gently and dry. Roughly chop and place in a bowl.
- Trim the centre leaves and reserve. Chop the mint leaves, tomatoes and cucumber.
- Add to the chopped lettuce. Mix the oil and lemon juice together and pour some into a small bowl.
- Place the bowl in the middle of a large plate and stand the centre leaves in the bowl.
- Pour the remaining dressing over the lettuce and mint mixture, toss, then spoon around the bowl on the plate.
