Potato Madeira Cake
Ingredients
- 1 lb potatoes peeled, mashed and passed through a ricer
- 1 cup icing sugar confectioners sugar, sifted
- 4 oz candied peel candied fruit, chopped
- 2 oz butter melted
- 1/2 tsp vanilla essence
- 2 medium eggs separated
- milk
Instructions
- Mix together the potatoes, icing sugar, peel, melted butter, vanilla and beaten egg yokes.
- Whisk the 2 egg whites until stiff and fold into the mixture. Add a little milk if the mixture is too stiff, then pour into a greased 20cm (8 in) cake or loaf tin.
- Bake in the oven Gas mark 4, 350°F (180°C) for 45 minutes.
