
Beef, Raisin and Walnut Burgers
A tasty variation of the traditional hamburger using bulgar wheat, raisins and walnuts.when soaked in water it expands and becomes quite tender. Serve these burgers with a salad or cooked vegetables, or in a burger bun with a low-calorie mayonnaise. They should be served as soon as they are cooked, but the raw mixture may be made up, shaped, and refrigerated up to 12 hours in advance.
Ingredients
- 1 lb lean minced beef
- 2 oz bulgar wheat
- 2 oz raisins
- 4 oz onion
- 1 clove garlic
- 1 oz walnut pieces
- 1 tablespoon olive oil
- 4 tablespoons fresh parsley
- 2 tablespoons Worcestershire sauce
- 1/2 tablespoon vegetable oil
- 1 teaspoon salt Freshly ground black pepper
Instructions
- Soak the bulgar wheat and the raisins in boiling water for 15 minutes. Drain thoroughly and squeeze out any excess moisture by wrapping the mixture in a clean kitchen cloth and wringing out the liquid. Place the mixture in a bowl.
- Finely chop the onion and garlic and chop the walnuts. Warm the oil over a medium heat in a frying pan and saute the onion, garlic and walnuts for about 5 minutes until the onion is transparent.
- Add the onion mixture and the minced beef to the bulgar and raisins. Beat the egg and add it, along with the remaining ingredients, to the mixture. Mix well, then shape into 8 burgers.
- Add the vegetable oil to a nonstick frying pan and cook the burgers over a medium heat for about 15 minutes, turning occasionally until thoroughly cooked. If desired, a higher heat will give a crispy brown crust. Season to taste and serve.
