Avocado Special
Use a petits fours cutter to cut out hearts.
Ingredients
- 1 large ripe avocado
- juice of 1/2 lemon
- 2 floz thick bottled mayonnaise
- 1 slice cooked ham finely chopped
- 1 tablespoon snipped chives
- teaspoon French mustard
- salt and freshly ground black pepper
to garnish
- lettuce leaves
- tomato flesh cut into heart shapes
Instructions
- Cut the avocado in half lengthways and remove the stone. Scoop out the flesh with a teaspoon, leaving a thin lining of flesh on the inside of the shells.
- Put the flesh in a bowl, sprinkle over the lemon juice, then beat until smooth. Add the mayonnaise, ham, chives and mustard, mix well and season to taste with salt and pepper.
- Pile the mixture back into the avocado shells.
- Line 2 individual plates with lettuce leaves, and arrange the filled avocados on the lined plates. Garnish the avocados with the tomato shapes and serve at once
