As the title suggests, this is a popular Spanish recipe. Serve for lunch or supper.
ingredients
1 onion, peeled and chopped
1 garlic clove, peeled and chopped
1 red pepper, cored, deseeded and sliced
1 tbsp oil
1 (8 oz (225 g)) can tomatoes
1 x (7 1/2 oz/200 g) can asparagus tips
(optional) few green beans and peas
2 oz (50 g) chorizo or salami
2 thin slices cooked ham, roughly chopped
4 eggs
method
1. Fry onion, garlic and red pepper in oil for 5 minutes.
2. Add tomatoes, asparagus, green beans, peas and seasoning. Cook for 1 minute.
3. Divide mixture between two medium sized gratin dishes. Arrange chorizo and ham on top and break two eggs into each dish.
4. Cook in a moderate oven Mark 4 180°C) 350°F for about 25 minutes untiI eggs are set.
