As the title suggests, this is a popular Spanish recipe. Serve for lunch or supper.

  • 1 onion peeled and chopped
  • 1 garlic clove peeled and chopped
  • 1 red pepper cored, deseeded and sliced
  • 1 tbsp oil
  • 8 oz canned tomatoes
  • 7 oz canned asparagus tips
  • optional few green beans and peas
  • 2 oz chorizo or salami
  • 2 thin slices cooked ham roughly chopped
  • 4 eggs


  • Fry onion, garlic and red pepper in oil for 5 minutes.
  • Add tomatoes, asparagus, green beans, peas and seasoning. Cook for 1 minute.
  • Divide mixture between two medium sized gratin dishes. Arrange chorizo and ham on top and break two eggs into each dish.
  • Cook in a moderate oven Mark 4 180°C) 350°F for about 25 minutes untiI eggs are set.
