
Flamenco Eggs
As the title suggests, this is a popular Spanish recipe. Serve for lunch or supper.
Ingredients
- 1 onion peeled and chopped
- 1 garlic clove peeled and chopped
- 1 red pepper cored, deseeded and sliced
- 1 tbsp oil
- 8 oz canned tomatoes
- 7 oz canned asparagus tips
- optional few green beans and peas
- 2 oz chorizo or salami
- 2 thin slices cooked ham roughly chopped
- 4 eggs
Instructions
- Fry onion, garlic and red pepper in oil for 5 minutes.
- Add tomatoes, asparagus, green beans, peas and seasoning. Cook for 1 minute.
- Divide mixture between two medium sized gratin dishes. Arrange chorizo and ham on top and break two eggs into each dish.
- Cook in a moderate oven Mark 4 180°C) 350°F for about 25 minutes untiI eggs are set.
