Potato Scotch Eggs
Ingredients
- 1 1/4 lb duchess potato mixture
- 4 medium eggs hard boiled (cooked)
- 1 medium egg beaten
- fresh brown breadcrumbs
- few chopped chives Vegetable oil
Instructions
- Divide the potato mixture into four and make a parcel round each hard boiled egg.
- Coat with beaten egg, then roll in the breadcrumbs and chives mixed together.
- Heat the oil in a deep frying pan and cook each egg for about 5 minutes.
- Drain well on absorbent paper.
