Turkey Steaks with Sage
Ingredients
- 8 small boneless turkey steaks each weighing 3 oz
- 1 turkey liver
- 4 leaves fresh sage
- 1 large garlic clove
- Piece of lemon zest
- 2 oz lean ham
- 3 anchovy fillets
- 1 tbsp capers
- 4 tbsp olive oil
- 1 tsp salt
- 1/2 tsp white pepper
- Juice of 1/2 lemon
Instructions
- Wash and dry sage, then cut into fine strips. Peel and crush garlic. Wash turkey liver, remove any fat or membrane, then cube. Chop lemon zest, ham, anchovies and capers finely before combining with cubed liver and garlic.
- Wash and dry turkey steaks.
- Heat oil in a large pan, add turkey liver mixture and saute briefly before laying steaks on top.
- Season steaks with salt, pepper and sage, sprinkle on lemon juice. Cook for 2-3 minutes on each side, then serve on warmed plate with savoury mixture.
