  • 1/2 oz butter
  • 1 shallot finely chopped
  • 6 oz Cheddar cheese grated
  • 4 oz smoked or smoky cheese grated
  • 1/2 oz plain flour
  • 6 floz single cream
  • Salt and pepper
  • 4 oz cooked prawns chopped
  • Raw vegetables


  • Melt the butter in a small, deep bowl for 30 seconds on HIGH.
  • Add the shallot and cook for 1 minute on HIGH to soften.
  • Toss the cheeses and flour together and add to the bowl with the shallot. Stir in the cream, salt and pepper.
  • Cook for 4 minutes on MEDIUM or until the cheese has melted. Stir the mixture twice whilst cooking. Stir in the prawns.
  • Serve hot with raw vegetables for dipping.
