
Spiced Potato
Ingredients
- 2 tbsp oil
- 1/2 inch 1 cm piece fresh root ginger, peeled and shredded
- 2 tsp medium curry powder
- 1 lb potatoes roughly chopped
- 5 floz chicken stock
Instructions
- Heat the oil in a saucepan and fry the ginger and curry powder, stirring constantly until the spices release their aroma about 5 minutes.
- Add potatoes and toss until coated. Add stock and cook for 40 minutes until the potatoes are tender.
