Celery victor
Celery Victor is the creation of the chef at one of San Francisco's most famous hotels.
Ingredients
- 3 Large celery hearts halved
- 12 floz Chicken stock
- Salt and pepper to taste
- 2 Bay leaves
- 4 floz Olive oil
- 4 Tbs Wine vinegar
- 6 Lettuce leaves
- 6 Anchovies halved
- 12 Pimiento strips
Instructions
- Put the celery hearts in a saucepan and pour over the stock and seasonings.
- Bring to the boil, reduce the heat to low and cover the pan.
- Simmer for 20 minutes, or until the celery is tender.
- Drain and arrange the hearts in a bowl.
- Combine the oil and vinegar and pour over the celery. Set aside in the refrigerator for about 1 1/2 hours, or until the hearts have cooled completely.
- Arrange the lettuce leaves on a serving dish. Put the hearts on top and garnish with a lattice pattern of anchovies and pimiento strips. Serve at once.
