Celery Victor is the creation of the chef at one of San Francisco's most famous hotels.

  • 3 Large celery hearts halved
  • 12 floz Chicken stock
  • Salt and pepper to taste
  • 2 Bay leaves
  • 4 floz Olive oil
  • 4 Tbs Wine vinegar
  • 6 Lettuce leaves
  • 6 Anchovies halved
  • 12 Pimiento strips


  • Put the celery hearts in a saucepan and pour over the stock and seasonings.
  • Bring to the boil, reduce the heat to low and cover the pan.
  • Simmer for 20 minutes, or until the celery is tender.
  • Drain and arrange the hearts in a bowl.
  • Combine the oil and vinegar and pour over the celery. Set aside in the refrigerator for about 1 1/2 hours, or until the hearts have cooled completely.
  • Arrange the lettuce leaves on a serving dish. Put the hearts on top and garnish with a lattice pattern of anchovies and pimiento strips. Serve at once.
