
Piperade
Perfect for when you are in hurry to get dinner on the table, this classic Spanish stir-fry is made in just 20 minutes.
Ingredients
- 1 tablespoon olive oil
- 1 large onion sliced
- 4 green peppers seeded and sliced
- 1 1/2 lb tomatoes peeled and chopped
- 1 garlic clove crushed
- salt and pepper
- 1 tablespoon chopped basil
- 4 small gammon rashers trimmed
- 4 eggs beaten
Instructions
- Heat the oil in a frying pan. Add the onion and fry gently until soft. Add the peppers, tomatoes, garlic, and salt and pepper to taste. Cook until the tomatoes are pulpy. Add the basil.
- Meanwhile, cook the gammon under a preheated moderate grill until tender, turning once. Place on a warmed serving dish and keep warm.
- Add the eggs to the frying pan and stir until just scrambled. Remove from the heat and pile on top of the gammon. Serve immediately.
