  • 1 lb strong flour
  • 1 tsp salt
  • 2 tsp milk powder
  • 1 tsp lard
  • 1 oz yeast
  • 1 pint water at 40C
  • 1 tsp sugar


  • Sift the flour, salt and milk powder into a warmed bowl and rub in the fat.
  • Dissolve the yeast and sugar in the water and mix into the flour to form a medium-soft dough.
  • Knead thoroughly, replace in the bowl, cover with a cloth and allow to prove in a warm place for 1 hour.
  • Knead the dough and divide into two equal pieces; mould and place into greased bread tins.
  • Allow to prove until double in size.
  • Bake at 200°C for 35 minutes.
