If you can't get rocket or dandelion use any salad leaves.

  • 1 bunch rocket or dandelion leaves
  • 1 tbsp tahini sesame seed paste
  • 1 tbsp water
  • 2 tbsps oil
  • 1 tsp lemon juice
  • 1/2 inch 1 cm piece root ginger, peeled and grated
  • 4 spring onions


  • Separate the rocket or dandelion leaves, wash gently and dry. Place in a bowl. Beat the tahini paste with the water. Beat in the remaining ingredients, except the spring onions. Arrange the leaves in a circle on individual plates.
  • Finely chop the spring onions and arrange in the centre of each plate.
  • Dribble over the dressing, serve at once.
