Rocket With Sesame Seed Dressing
If you can't get rocket or dandelion use any salad leaves.
Ingredients
- 1 bunch rocket or dandelion leaves
- 1 tbsp tahini sesame seed paste
- 1 tbsp water
- 2 tbsps oil
- 1 tsp lemon juice
- 1/2 inch 1 cm piece root ginger, peeled and grated
- 4 spring onions
Instructions
- Separate the rocket or dandelion leaves, wash gently and dry. Place in a bowl. Beat the tahini paste with the water. Beat in the remaining ingredients, except the spring onions. Arrange the leaves in a circle on individual plates.
- Finely chop the spring onions and arrange in the centre of each plate.
- Dribble over the dressing, serve at once.
