
Apple and sultana strudel
This is a delicious recipe for a classic strudel with a twist. The twist being the sultanas which add a lovely sweetness and some additional fruitiness to the dish.
Ingredients
- 12 oz Bramley apples peeled, cored and sliced
- 1 Cox's apple peeled, cored and sliced
- Finely grated zest and juice of 1 lemon
- 2 tbsp soft brown sugar
- 1 tsp cinnamon
- 3 1/2 oz sultanas
- 10 oz pack frozen filo pastry thawed
- 2 oz butter melted
- 1 1/2 oz fresh breadcrumbs
- 1 tbsp icing sugar
Instructions
- Preheat oven to 190°C/Gas 5.
- Mix apples with the lemon zest and juice, brown sugar, cinnamon and sultanas.
- Place the pastry sheets on a baking tray, brushing between each sheet with butter.
- Sprinkle with breadcrumbs, and pile the filling lengthways along the middle of the pastry.
- Fold in the pastry ends to stop the filling oozing out, then wrap up into a thick roll.
- Brush with butter, bake for 35 minutes and serve dusted with icing sugar.
