This is a delicious recipe for a classic strudel with a twist. The twist being the sultanas which add a lovely sweetness and some additional fruitiness to the dish.

Ingredients
 

  • 12 oz Bramley apples peeled, cored and sliced
  • 1 Cox's apple peeled, cored and sliced
  • Finely grated zest and juice of 1 lemon
  • 2 tbsp soft brown sugar
  • 1 tsp cinnamon
  • 3 1/2 oz sultanas
  • 10 oz pack frozen filo pastry thawed
  • 2 oz butter melted
  • 1 1/2 oz fresh breadcrumbs
  • 1 tbsp icing sugar

Instructions

  • Preheat oven to 190°C/Gas 5.
  • Mix apples with the lemon zest and juice, brown sugar, cinnamon and sultanas.
  • Place the pastry sheets on a baking tray, brushing between each sheet with butter.
  • Sprinkle with breadcrumbs, and pile the filling lengthways along the middle of the pastry.
  • Fold in the pastry ends to stop the filling oozing out, then wrap up into a thick roll.
  • Brush with butter, bake for 35 minutes and serve dusted with icing sugar.
