  • 4 prime ribs steaks
  • 1/2 tsp salt
  • freshly ground black pepper to taste

for the topping

  • 5 tsp sugar
  • 5 tsp white vinegar
  • pinch cayenne pepper
  • 1 small cucumber thinly sliced
  • 10 radishes cut into julienne strips
  • 2 spring onions chopped


  • First prepare the topping. Mix sugar and vinegar until sugar has dissolved. Mix with remaining ingredients and allow to rest for 10 minutes.
  • Drain and set aside.
  • To prepare the meat, slash fat edges 2.5 cm (1 inch) intervals to prevent meat from curling during cooking.
  • Heat a ridged pan until smoking hot, then grill meat for 5 to 7 minutes in total (rare) or 7 to 10 minutes in total (medium).
  • Season meat with salt and pepper and top with drained topping.
