Prime Rib Steaks with Vegetable Topping recipe
Ingredients
- 4 prime ribs steaks
- 1/2 tsp salt
- freshly ground black pepper to taste
for the topping
- 5 tsp sugar
- 5 tsp white vinegar
- pinch cayenne pepper
- 1 small cucumber thinly sliced
- 10 radishes cut into julienne strips
- 2 spring onions chopped
Instructions
- First prepare the topping. Mix sugar and vinegar until sugar has dissolved. Mix with remaining ingredients and allow to rest for 10 minutes.
- Drain and set aside.
- To prepare the meat, slash fat edges 2.5 cm (1 inch) intervals to prevent meat from curling during cooking.
- Heat a ridged pan until smoking hot, then grill meat for 5 to 7 minutes in total (rare) or 7 to 10 minutes in total (medium).
- Season meat with salt and pepper and top with drained topping.
