
Spicy Garlic Prawns
Garlic has a natural affinity with prawns; enhancing their subtle flavour without being overpowering. You can use other vegetables such as aubergine, broccoli or cauliflower instead of the courgettes.
Ingredients
- 8 oz peeled prawns
- 1 lb courgettes
- 4 garlic cloves
- 1 green chilli
- 1 tablespoon sunflower oil
- 1 level teaspoon grated fresh ginger
- 2 large tomatoes
- 3 tablespoons chopped coriander
- 1/4 teaspoon ground turmeric
- 1/2 teaspoon cumin seeds
- 1 tablespoon lemon juice
- Salt and white pepper
Instructions
- Cut the courgettes into sticks about 3in (80mm) long and 1/4 in (5 mm) thick. Peel and crush the garlic, de-seed and finely chop the chilli. Heat the oil in a pan and gently fry the garlic, grated ginger and chilli for about 3 minutes.
- De-seed and roughly chop the tomatoes and add them to the pan. Increase the heat
- and cook for a further 4 minutes, stirring frequently.
- Add all the remaining ingredients to the pan and cook for 2 minutes, stirring occasionally.
- Season to taste and serve as a hot starter or light snack.
- Serve the dish piping hot straight from the pan, if you wish. Take care not to overcook the ingredients.
