
Turkey Schnitzel with Almonds
Mixing ground turkey, seasoned bread crumbs, and finely chopped almonds together with salt and pepper before cooking will give you a light but crispy outer crust.
Ingredients
- 4 x 6 oz slices turkey
- freshly milled white pepper
- 2 tablespoons flour
- salt
- 1 teaspoon paprika
- 2 oz butter
- 4 oz flaked almonds
- 2 canned peach halves
Instructions
- Remove any skin from the turkey. Rub each slice with pepper. Season the flour with salt and paprika and coat the turkey slices with the mixture, shaking off any excess flour.
- Heat half the butter in a large frying pan and fry the turkey for 1 minute each side. Remove the meat from the pan and dip in the almonds, pressing the almonds on firmly.
- Add the remaining butter to the pan, return the turkey to the pan and fry each side for a further 3-4 minutes, then transfer the meat to a warm plate and keep it hot.
- Drain and slice the peaches, warm them through in the pan and serve with the turkey.
- Serve with: French bread and a green salad.
