
Pork with Prune Sauce
Ingredients
- 4 pork loin chops trimmed
- 1 tablespoon oil
- 1 small onion thinly sliced
- 1 garlic clove crushed
- 14 oz can prunes in natural juice
- 2 teaspoons cornflour
- 1 tablespoon soy sauce
- 2 teaspoons wine vinegar watercress sprigs to garnish
Instructions
- Cook the pork under a preheated moderate grill for about 10 minutes on each side, or until cooked through.
- Meanwhile, heat the oil in a non-stick frying pan, add the onion and fry for 2 minutes, stirring. Stir in the garlic and set aside.
- Drain the prunes, reserving the juice. Remove the stones and set aside 4 prunes for garnish. Put the remaining prunes and the juice in a blender or food processor.
- Add the cornflour, soy sauce, vinegar and onion mixture and work until smooth.-Pour into the pan and cook, stirring, until thick and shiny.
- Divide the sauce between warmed individual serving plates and lay a grilled pork chop on each one. Garnish with a prune and a watercress sprig.
- In this recipe canned prunes in natural juice are used but you can replace these with prunes which have been cooked with water until just tender.
