Ingredients
 

  • 1 clove garlic crushed
  • 1 tsp brown sugar
  • 1 tsp oil
  • 1 tsp lime juice
  • 1 tsp cornflour
  • 1 lb lean pork cut into 2.5 cm (1 inch) cubes
  • 1/4 pint oil for deep-frying
  • 1 green chilli seeded and thinly sliced
  • 1 red chilli seeded and thinly sliced
  • 8 spring onions trimmed and sliced diagonally
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp ground nutmeg
  • Pinch ground cloves
  • 4 tbsps soy sauce
  • Juice and rind of 1 lime
  • 1/4 pint coconut milk
  • Salt and pepper

Instructions

  • Combine the garlic, sugar, oil, lime juice and cornflour in a large bowl. Stir in the pork and coat thoroughly with the garlic and lime juice mixture. Allow to stand in the refrigerator for at least 1 hour.
  • Heat the oil for frying in a wok and add the pork cubes. Cook, stirring frequently, for about 10 minutes until golden brown and cooked through. Drain and set aside.
  • Remove all except about 1 tbsp of the oil. Reheat and add the chillies and onions. Stir-fry for about 2 minutes.
  • Add the ground spices and fry for a further 30 seconds. Stir in the remaining ingredients and bring to the boil.
  • Add the fried pork to the sauce and heat through. Adjust the seasoning and serve.
