
Pork with Lime and Chilli
Ingredients
- 1 clove garlic crushed
- 1 tsp brown sugar
- 1 tsp oil
- 1 tsp lime juice
- 1 tsp cornflour
- 1 lb lean pork cut into 2.5 cm (1 inch) cubes
- 1/4 pint oil for deep-frying
- 1 green chilli seeded and thinly sliced
- 1 red chilli seeded and thinly sliced
- 8 spring onions trimmed and sliced diagonally
- 1 tsp ground turmeric
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp ground nutmeg
- Pinch ground cloves
- 4 tbsps soy sauce
- Juice and rind of 1 lime
- 1/4 pint coconut milk
- Salt and pepper
Instructions
- Combine the garlic, sugar, oil, lime juice and cornflour in a large bowl. Stir in the pork and coat thoroughly with the garlic and lime juice mixture. Allow to stand in the refrigerator for at least 1 hour.
- Heat the oil for frying in a wok and add the pork cubes. Cook, stirring frequently, for about 10 minutes until golden brown and cooked through. Drain and set aside.
- Remove all except about 1 tbsp of the oil. Reheat and add the chillies and onions. Stir-fry for about 2 minutes.
- Add the ground spices and fry for a further 30 seconds. Stir in the remaining ingredients and bring to the boil.
- Add the fried pork to the sauce and heat through. Adjust the seasoning and serve.
