Phal Mai Rabri Kulfl (Indian ice cream set in apples and oranges)
Ingredients
- 32 floz Full-cream milk
- 5 oz Sugar
- a few strands Saffron kesar, dissolved in 2 tbsp water
- 10 Black grapes kala angoor
- 10 Green grapes hara angoor
- 15 Pistachios pista
- 3 Apples seb
- 3 Oranges santra
Instructions
- Pour the milk in a thick-bottomed pan, simmer till reduced to half the amount.
- Add the sugar and cook till it dissolves in the milk. Boil till a semi-solid mass remains.
- Add the prepared saffron, grapes, and pistachios. Keep aside.
- Slice off the tops of the apples,, remove the core and carefully scoop out the inside portion of the fruit. Keep the shell intact.
- Cut the top of the orange and remove all the pulp, only the orange shell should remain.
- Fill the orange and apple cups with the milk mixture. (Traditionally a small earthenware disc is used to cover, then sealed with wheat dough.) Chill the stuffed fruits in an earthen pot filled with ice for 1 hour or till it sets. Cut in slices and serve.
