Turkey Drumsticks with Tomato
Ingredients
- 2 turkey drumsticks weighing 1 1/4 lbs each
- 2 garlic cloves
- Sprig rosemary
- 1 tsp salt
- Pinch white pepper
- 3 tbsp wine vinegar
- 5 anchovy fillets
- 14 oz small can peeled tomatoes
- 3 tbsp olive oil
- 1 tbsp capers
- 2 egg yolks
- Juice of 1/2 lemon
- 1 oz butter
Instructions
- Wash and dry turkey drumsticks. Peel garlic. Wash, dry and trim rosemary, then finely chop with garlic.
- Rub drumsticks with salt, pepper and rosemary and garlic mixture, pour vinegar over them, cover and put aside to marinate for 2 hours.
- Turn several times while marinating.
- Finely chop anchovies. Drain tomatoes; chop roughly.
- Heat oil and brown turkey thoroughly on all sides, then add anchovies. Stir in tomatoes and capers and simmer all together for 1 1/4 hours, adding some tomato juice if necessary.
- Take meat off bone, cut into 3 cm (l 1/4 in) pieces and reheat in sauce.
- Beat egg yolks with lemon juice and stir into sauce with butter.
