  • 8 floz Water
  • 5 oz Sugar

for the batter:

  • 9 oz Refined flour maida
  • 1/2 tsp Baking powder
  • 2 oz Yoghurt dahi
  • 1 tsp Green cardamom choti elaichi powder
  • a few strands Saffron kesar, soaked in 1 tbsp milk
  • 11 oz Ghee

for the thickened milk (rafcri):

  • 96 floz Milk
  • 8 oz Sugar
  • 5 drops Rose water gulab jal
  • 1 oz Pistachios pista, chopped


  • For the sugar syrup, heat the water in a pan, add the sugar and cook till it reaches a thread-like consistency. Reduce heat for the batter.
  • Sift refined flour and Baking powder in a mixing bowl. Add the other ingredients (except ghee) and enough water to make a batter of pouring consistency. Add milk, if required.
  • Heat the ghee in a flat pan; drop a spoonful of batter and fry both sides till golden brown. Remove with a slotted spoon and drain the excess oil on absorbent kitchen towels. Repeat till all the batter is used up.
  • Dip the fried pancakes in the sugar syrup and remove immediately.
  • For the thickened milk (rabri), heat the milk in a heavy-bottomed pan; cook till it is reduced to 1/3 rd. Stir in the remaining ingredients and remove from heat. Keep aside to cool and then refrigerate. Serve with the prepared pancakes.
