Malpua Rabri (Shallow fried pancakes)
Ingredients
- 8 floz Water
- 5 oz Sugar
for the batter:
- 9 oz Refined flour maida
- 1/2 tsp Baking powder
- 2 oz Yoghurt dahi
- 1 tsp Green cardamom choti elaichi powder
- a few strands Saffron kesar, soaked in 1 tbsp milk
- 11 oz Ghee
for the thickened milk (rafcri):
- 96 floz Milk
- 8 oz Sugar
- 5 drops Rose water gulab jal
- 1 oz Pistachios pista, chopped
Instructions
- For the sugar syrup, heat the water in a pan, add the sugar and cook till it reaches a thread-like consistency. Reduce heat for the batter.
- Sift refined flour and Baking powder in a mixing bowl. Add the other ingredients (except ghee) and enough water to make a batter of pouring consistency. Add milk, if required.
- Heat the ghee in a flat pan; drop a spoonful of batter and fry both sides till golden brown. Remove with a slotted spoon and drain the excess oil on absorbent kitchen towels. Repeat till all the batter is used up.
- Dip the fried pancakes in the sugar syrup and remove immediately.
- For the thickened milk (rabri), heat the milk in a heavy-bottomed pan; cook till it is reduced to 1/3 rd. Stir in the remaining ingredients and remove from heat. Keep aside to cool and then refrigerate. Serve with the prepared pancakes.
