This recipe for chicory soup in the microwave is a great way to celebrate cold days.

  • 4 Heads of Chicory
  • 3 tbsp Butter
  • 1 tbsp Flour
  • 2 pints hot chicken stock
  • 2 tsp Sugar
  • Salt and pepper
  • 6 tbsp Dry vermouth


  • Chop the chicory and put in a large bowl with the butter. Cover and heat on HIGH for 6 minutes.
  • Stir in the flour. Then blend in the stock, sugar, salt and pepper. Heat on HIGH for 10-12 minutes.
  • Stir in the vermouth. Cook for 1-2 minutes more, then serve garnished with freshly made, hot croutons.
