
Chicory Soup (Microwave)
This recipe for chicory soup in the microwave is a great way to celebrate cold days.
Ingredients
- 4 Heads of Chicory
- 3 tbsp Butter
- 1 tbsp Flour
- 2 pints hot chicken stock
- 2 tsp Sugar
- Salt and pepper
- 6 tbsp Dry vermouth
Instructions
- Chop the chicory and put in a large bowl with the butter. Cover and heat on HIGH for 6 minutes.
- Stir in the flour. Then blend in the stock, sugar, salt and pepper. Heat on HIGH for 10-12 minutes.
- Stir in the vermouth. Cook for 1-2 minutes more, then serve garnished with freshly made, hot croutons.
