Blackberry pancakes
Blackberry pancakes are a variation on the classic American breakfast dish. Serve these with maple syrup for a delicious treat that will put a pep in your step.
Ingredients
- 1 1/2 oz Plain flour
- 2 tsp Caster sugar
- Pinch of salt
- 1 Egg
- 3 floz Milk
- Oil for frying
for the topping
- 4 oz Canned blackberries
- 3 tbsp Honey
- 1 1/2 tbsp Brandy
- Vanilla ice cream
- 1 oz Walnuts
Instructions
- Sift flour, sugar and salt into a bowl. Make a well in the centre and add egg and milk. Whisk till smooth. Pour into jug and leave to stand for 5 minutes.
- Lightly oil an 8 inch (20 cm) pancake pan and heat. Make four thin pancakes. Fold into quarters, arrange on a warmed serving plate and keep hot.
- Place drained blackberries in a sieve and rinse under running water. Turn on to kitchen paper to drain.
- Gently heat honey with brandy in a saucepan. Remove from heat before it boils.
- To assemble pancakes, put a cube of ice cream on top of each and scatter with blackberries. Pour over hot honey mixture and sprinkle with chopped walnuts.
- Serve immediately.
