Blackberry pancakes are a variation on the classic American breakfast dish. Serve these with maple syrup for a delicious treat that will put a pep in your step.

  • 1 1/2 oz Plain flour
  • 2 tsp Caster sugar
  • Pinch of salt
  • 1 Egg
  • 3 floz Milk
  • Oil for frying

for the topping

  • 4 oz Canned blackberries
  • 3 tbsp Honey
  • 1 1/2 tbsp Brandy
  • Vanilla ice cream
  • 1 oz Walnuts


  • Sift flour, sugar and salt into a bowl. Make a well in the centre and add egg and milk. Whisk till smooth. Pour into jug and leave to stand for 5 minutes.
  • Lightly oil an 8 inch (20 cm) pancake pan and heat. Make four thin pancakes. Fold into quarters, arrange on a warmed serving plate and keep hot.
  • Place drained blackberries in a sieve and rinse under running water. Turn on to kitchen paper to drain.
  • Gently heat honey with brandy in a saucepan. Remove from heat before it boils.
  • To assemble pancakes, put a cube of ice cream on top of each and scatter with blackberries. Pour over hot honey mixture and sprinkle with chopped walnuts.
  • Serve immediately.
