George I Christmas Pudding
George I Christmas Pudding is a delicious and traditional British pudding, made with dried fruits and spices, that was first created in the 18th century.
Ingredients
- 1 lb plain flour All purpose
- 1 teaspoon salt
- 1 heaped teaspoon mixed
- spice
- 1/2 nutmeg grated
- 1 1/2 lb finely grated suet
- 1 lb sugar
- 1 lb browned fresh breadcrumbs
- 1 lb prunes halved and stoned (seeded)
- 1 lb chopped mixed peel
- 1 lb small raisins
- 1 lb sultanas golden raisins
- 1 lb currants
- 1 lb eggs weighed in their shells
- 1/2 pint milk
- juice of 1 lemon
- 1/2 cup brandy
Instructions
- Sift the flour, salt and spice into a bowl.
- Mix in the suet, sugar and breadcrumbs, then add the dried fruit.
- Beat together the eggs, milk, lemon juice and brandy and add to the bowl. Mix well.
- Spoon into three greased 600 ml (1 pint) pudding basins.
- Boil for 8 hours. When ready to serve, boil again for 2 hours.
- Serve with rum butter.
