  • 2.2 lb Jerusalem artichokes
  • 5 pint blanc preparation

Instructions

  • Peel the artichokes and place immediately into acidulated water.
  • Cook for 8 minutes in the gently simmering blanc covered with a muslin, then drain and serve.
