
Fruit Buns
Ingredients
- 4 oz butter or margarine
- 4 oz caster sugar
- 2 eggs lightly beaten
- 4 oz self-raising flour
- 3 oz currants
Instructions
- Place 18 paper cake cases on a baking tray or in two deep bun tin trays.
- Cream the butter or margarine with the sugar until light and fluffy.
- Gradually beat in the eggs. Carefully fold in the flour and currants, using a metal spoon. Divide the mixture between the paper cases.
- Bake in a moderately hot oven for 15 - 20 minutes or until well risen and golden brown. Transfer to a wire rack to cool.
- To cream fat and sugar, make sure they are at room temperature and soft. Use the flat side of a wooden spoon and beat in one direction, keeping the mixture down in the base of the bowl.
