Exotic Brazilian passion fruit are one of the most fragrant and distinctive-tasting tropical fruits available. This subtle blend of tropical fruits provides an excellent alternative to alcoholic drinks at parties. You will need a liquidiser for this recipe.

  • 1 large ripe pineapple
  • 8 large juicy oranges
  • 8 passion fruit
  • Orange slices and pineapple leaves for decoration


  • Remove the top and bottom of the pineapple and cut away the skin. Cut the fruit into quarters lengthways, and remove the woody core. Cut the flesh into pieces, place in a liquidiser and blend until smooth. Pass through a sieve to remove fibres.
  • Cut the oranges in half and squeeze and strain the juice - you will need about 1 1/2 pints (850 ml).
  • Cut the passion fruit into halves, then scoop out the seeds into a sieve placed over a bowl. Mash the seeds into the sieve to extract all the juice, using the back of a stainless-steel spoon. There should be ¢â‚¬Â¢about 1/4 pint (150 ml) of juice.
  • Mix the juices in a jug. Half fill serving glasses with crushed ice. Pour the juice over the ice and decorate with orange slices and pineapple leaves.
