Aam Ki Chutney (Sweet mango relish)
Ingredients
- 4 lb Mangoes raw, peeled, and grated to get 1 kg (2.2 lb) pulp
- 1 3/4 oz Ginger adrak, 2 inch piece, peeled, grated
- 2.2 lb Sugar
- 2 1/2 oz Salt
- 4 tsp Garam masala
- 4 tsp Red chilli powder or black pepper kali mirch powder
- 1 1/2 tsp Acetic acid
- 8 tsp Melon magaz seeds (optional)
- 1/4 tsp Sodium benzoate dissolved in 1 tsp hot water
Instructions
- Cook the mangoes and ginger together in a clean wok (kadhai) till the water evaporates completely.
- Add sugar and stir till it dissolves completely and the mixture thickens.
- Add salt, garam masala, red chilli or black pepper, and acetic acid; mix well.
- Remove the wok from the heat. Add melon seeds (optional) and mix. Add sodium benzoate and mix well.
- Cool and fill the chutney, while still warm, in a sterilized jar. Seal the jar with a lid after it cools completely.
