  • 1 curly endive
  • 5 oz walnut halves
  • 6 oz goat's cheese cubed
  • 1 tbsp cider vinegar
  • 3 tbsps walnut oil


  • Trim the curly endive, wash gently and dry. Break off into sprigs. Place in a salad bowl with the walnuts and goat's cheese. Beat the vinegar with seasoning, then beat in the oil.
  • Pour the dressing over the salad and toss well. Serve at once.
