Asparagus Milanese (Asperges Milanaise)

- asparagus
- grated Parmesan cheese
- melted butter
- nut-brown butter
Instructions
- Arrange cooked asparagus in a buttered earthenware dish.
- Season, sprinkle with finely grated Parmesan cheese and melted butter and gratinate under a salamander grill.
- When lightly coloured, finish with nut-brown butter.
