Artichokes with Anchovy Filling (Carciofi alia Triestina)

  • 20 small artichokes
  • 10 1/2 oz white breadcrumbs
  • 2 tsp chopped parsley
  • 4 chopped cloves of garlic
  • 5 1/2 oz grated Parmesan cheese
  • 3 1/2 oz chopped anchovy fillets
  • 2 tbsp olive oil
  • salt and pepper


  • Cut off the tops of the artichokes and remove the chokes.
  • Combine the remainder of the ingredients into a stuffing.
  • Fill into the centres of the artichokes.
  • Place in a shallow pan, moisten one-third of the way up with salted water and a little olive oil, cover and cook for 40 minutes. Serve hot with some of the cooking liquid.
