Crainquebille Potatoes
Ingredients
- 1 lb onions chopped
- 4 oz butter
- 1 1/2 lb potatoes cut into long shapes
- 1 pt white vegetable stock
- Salt and pepper to taste
- Bouquet garni
- 1 clove of garlic crushed
- 4 to matoes sliced
- 4 oz white breadcrumbs
Instructions
- Saute the chopped onion in the butter until transparent but not browned.
- Slice the potatoes lengthwise and arrange over the onions.
- Pour the stock over, to come about halfway up the potatoes.
- Season with salt and pepper, add the bouquet garni and crushed garlic.
- Top each potato piece with a slice of deseeded tomato.
- Bring to a gentle simmer, cover and cook for about 15 minutes until tender.
- Remove the lid and sprinkle the breadcrumbs over the top of the mixture.
- Brown under a hot grill.
