Ingredients
 

  • 1 lb onions chopped
  • 4 oz butter
  • 1 1/2 lb potatoes cut into long shapes
  • 1 pt white vegetable stock
  • Salt and pepper to taste
  • Bouquet garni
  • 1 clove of garlic crushed
  • 4 to matoes sliced
  • 4 oz white breadcrumbs

Instructions

  • Saute the chopped onion in the butter until transparent but not browned.
  • Slice the potatoes lengthwise and arrange over the onions.
  • Pour the stock over, to come about halfway up the potatoes.
  • Season with salt and pepper, add the bouquet garni and crushed garlic.
  • Top each potato piece with a slice of deseeded tomato.
  • Bring to a gentle simmer, cover and cook for about 15 minutes until tender.
  • Remove the lid and sprinkle the breadcrumbs over the top of the mixture.
  • Brown under a hot grill.
