
Cock a Leekie Soup
Ingredients
- 1 chicken carcass
- 1 onion
- bouquet garni
- 2 pints chicken stock
- 4 oz cooked chicken
- 3 carrots
- 1 lb leeks
- 4 oz no-need-to-soak prunes
- salt and pepper
- 1 tablespoon chopped parsley to garnish
Instructions
- Simmer the chicken carcass, onion and bouquet garni in the stock for an hour, then strain the liquid into a large saucepan.
- Slice the chicken meat into strips. Thinly slice the carrots and leeks. Add the chicken, vegetables and prunes to the stock.
- Bring to the boil and simmer gently for 20 minutes. Season with salt and pepper.
- Serve the soup garnished with freshly chopped parsley.
