Cream Cheese and Spring Onion Filling
Ingredients
- 2 large baked potatoes
- 8 oz full cream cheese
- 4 oz spring onions chopped
- 1 tbsp parsley chopped
- 1 tsp lemon juice
- 3 tbsp cream or top of the milk
- Salt and black pepper to taste
Instructions
- Halve the baked potatoes and scoop out the flesh.
- Mash the flesh thoroughly and mix with all the other ingredients.
- Fill the potato shells with this mixture and place in a hot oven to heat through.
