  • 2 large baked potatoes
  • 8 oz full cream cheese
  • 4 oz spring onions chopped
  • 1 tbsp parsley chopped
  • 1 tsp lemon juice
  • 3 tbsp cream or top of the milk
  • Salt and black pepper to taste


  • Halve the baked potatoes and scoop out the flesh.
  • Mash the flesh thoroughly and mix with all the other ingredients.
  • Fill the potato shells with this mixture and place in a hot oven to heat through.
