  • 1 lb fillet of beef
  • 1 tsp soft brown sugar
  • 3 star anise ground
  • 1/2 tsp ground fennel
  • 1 tbsp dark soy sauce
  • 2.5 cm 1 inch piece fresh root ginger, grated
  • 1/2 tsp salt
  • 2 tbsps vegetable oil
  • 6 spring onions sliced
  • 1 tbsp light soy sauce
  • 1/2 tsp freshly ground black pepper


  • Cut the beef into thin strips 2.5 cm (1 inch) long.
  • In a bowl, mix together the sugar, spices and dark soy sauce.
  • Put the beef, ginger and salt into the soy sauce mixture and stir well to coat evenly Cover and allow to stand for 20 minutes.
  • Heat the oil in a wok or large frying pan and stir-fry the onions quickly for 1 minute.
  • Add the beef and fry, stirring constantly, for 4 minutes, or until the meat is well browned.
  • Stir in the soy sauce and black pepper and cook gently for a further 1 minute.
