Cauliflower and Potato Dry Curry
Ingredients
- 2 lb cauliflower
- 2 medium potatoes
- 2 tbsp oil for frying
- 2 tsp ginger fresh or powdered
- 1 medium onion chopped
- 1 tsp turmeric
- 2 tsp salt
- 1/2 tsp chilli powder
- 1 tsp garam masala
Instructions
- Break the cauliflower into small florets, keeping a reasonable amount of stalk.
- Wash and drain.
- Peel the potatoes and cut into even-sized pieces.
- Heat the oil in a deep drying pan and fry the onions and ginger.
- Add the turmeric and stir well.
- Add the cauliflower and potato pieces and cook for 10 minutes, stirring occasionally.
- Add the salt, chilli powder and garam masala, cover and cook for a further 10 minutes.
- Before serving drain off any surplus liquid.
