Caramelized Potatoes
Instructions
- Peel the potatoes and place in a large saucepan with water and salt.
- Bring to the boil then simmer gently for 15 minutes, until the potatoes are just cooked.
- Drain and dry off a little.
- In a large frying pan, heat the sugar until lightly browned, or caramelized, stirring constantly.
- Add the butter and stir round the pan until melted.
- Add the potatoes and cook for about 10 minutes, shaking the pan carefully until all the potatoes are evenly coated.
