Caramel Banana Tart
Ingredients
- 3 oz butter
- 2 tablespoons caster sugar
- 1 egg
- 1 1/2 cups plain flour
- 1/2 teaspoon baking powder
for the filling
- 5 tablespoons plain flour
- 1 cup brown sugar
- 2 egg yolks beaten
- 2 cups milk
- 2 tablespoons butter
- 1/2 teaspoon vanilla essence
- 3 bananas
- lemon juice
- whipped cream for serving
Instructions
- Beat butter and sugar until light, add egg and beat well.
- Sift flour and baking powder and mix into butter mixture to form a firm dough.
- Turn onto a floured board and knead lightly.
- Roll into a circle and line a greased 23 cm (9 inch) pie plate.
- Crimp edge and prick base and sides with a fork.
- Bake in a moderately hot oven 190-200°C (375-400°F) for 15 to 20 minutes until cooked and lightly browned. Cool.
- for the filling
- Mix flour and sugar in a saucepan, gradually blend in egg yolks and milk.
- Add butter and cook over moderate heat, stirring constantly, until thickened and bubbling.
- Remove from heat, stir in vanilla essence and cool a little.
- Pour half into pie crust, cover with 2 sliced bananas, top with remaining caramel mixture. Leave until cool.
- Slice remaining banana and sprinkle with lemon juice.
- Decorate tart with swirls of whipped cream and banana slices.
