  • 4 Tbsp unsalted butter
  • 2 oz soft brown sugar
  • 3 large under ripe bananas peeled and cut on a diagonal into 5 cm pieces
  • 1/4 pint carton double cream heavy cream
  • 6 ready made pancakes


  • Heat the butter in a heavy based frying pan, then add the sugar and cook stirring periodically until it dissolves and bubbles.
  • Add the banana and cook until tender, then stir in the cream.
  • Heat the pancakes as per pack instructions, then divide between 3 serving plates.
  • Pour over the caramel bananas and serve immediately.
