You can use any type of cabbage that happens to be in season for this delicious recipe, juniper berries are wrinkled and black and, when crushed, release their delightful aroma. The flavour is reminiscent of gin, since juniper is a basic ingredient of the spirit. As a faint background hint, married with garlic, it adds a very special touch to cabbage.

Ingredients
 

  • 1 oz butter
  • 1 medium onion skinned and chopped
  • 1 garlic clove skinned and crushed
  • 6 juniper berries crushed
  • 1 lb cabbage shredded
  • salt and peppe

Instructions

  • Melt the butter in a large saucepan. Add the onion, garlic and juniper berries and lightly cook for 5 minutes, until the onion is soft.
  • Add the cabbage and stir until well coated in butter. Season to taste. Cover and cook the cabbage in its own juice for 10 minutes, stirring occasionally. The cabbage should still be slightly crunchy and not soft. Serve hot
