Black Olive, Tomato and Basil Dressing (Tapenade)
Ingredients
- 2.2 lb pitted black olives
- 5 1/2 oz capers
- 3 1/2 oz anchovy fillets
- 2 oz Dijon mustard
- 2 tsp fresh basil
- 7 1/2 floz olive oil
- 4 tbsp red wine vinegar
- 2 oz chopped sun-dried tomatoes
- 2 1/2 oz chopped parsley
Instructions
- Blend all the ingredients except the parsley and sun-dried tomatoes, to form a smooth paste.
- Finish by folding in the chopped parsley, dried tomatoes and seasoning.
