Rice and Olive Stuffing
Rice and olive stuffing is great for stuffing baked fish. It's basically a mixture of rice, herbs and olives.
Ingredients
- 3 tbsp long grain rice or 4 1/3 oz cooked rice
- 2 oz butter
- 1 medium-sized onion
- 2 sticks celery
- 2 oz stuffed olives
- 1/4 tsp spoon dried sage
- 1/4 tsp dried thyme
- salt and pepper
Instructions
- Cook the rice in boiling salted water until tender; then drain.
- Melt the butter in a small pan.
- Prepare the onion and celery and chop them finely.
- Fry gently in the butter for 3 minutes.
- Chop the olives, and add to the pan with the rice and herbs; cook gently for 3 minutes. Season to taste.
