Rice and olive stuffing is great for stuffing baked fish. It's basically a mixture of rice, herbs and olives.

  • 3 tbsp long grain rice or 4 1/3 oz cooked rice
  • 2 oz butter
  • 1 medium-sized onion
  • 2 sticks celery
  • 2 oz stuffed olives
  • 1/4 tsp spoon dried sage
  • 1/4 tsp dried thyme
  • salt and pepper


  • Cook the rice in boiling salted water until tender; then drain.
  • Melt the butter in a small pan.
  • Prepare the onion and celery and chop them finely.
  • Fry gently in the butter for 3 minutes.
  • Chop the olives, and add to the pan with the rice and herbs; cook gently for 3 minutes. Season to taste.
