Beef and Onions in Red Wine is an old-fashioned beef stew recipe. The addition of onions makes it more filling, and the wine gives it a rich flavor.

Ingredients
 

  • 3 1/2 lb stewing steak cut into 2.5 cm cubes
  • 2 1/3 lb blanched button onions
  • 2 crushed cloves of garlic
  • 9 oz diced tomato flesh
  • 1 bayleaf
  • 1 cinnamon stick
  • 8 1/2 floz red wine
  • 1 1/3 pint beef stock
  • 4 tbsp vinegar
  • 4 tbsp olive oil
  • seasoning
  • chopped parsley

Instructions

  • Place all the ingredients into a fireproof dish, cover with the lid and cook in the oven at 180°C for 1 1/2 hours.
  • Remove the meat and onions and strain the cooking liquid, skim off any fat and thicken with diluted cornflour.
  • Pour back over the meat and onions and serve sprinkled with chopped parsley.
