Any type of yogurt can be used for this very quick and easy recipe, and there are many varieties to choose from.

  • 10 oz natural yogurt
  • 5 floz fresh double cream
  • 3 ripe bananas mashed
  • grated rind and juice of 1 lemon
  • 2 tbsp caster sugar
  • 1 egg white
  • grated lemon rind and fresh mint leaves to decorate


  • in a large bowl, whisk the yogurt and cream together until lightly stiff, then stir in the bananas, lemon rind and juice and sugar to taste.
  • in a medium bowl, whisk the egg white until stiff, then fold gently into the mixture. Chill until ready to serve.
  • Pour into 4 glass dishes, and serve, decorated with lemon rind and fresh mint leaves.
