Asparagus, Mushroom and Tomato Pizza
Ingredients
- 25 cm 10 in thin pizza base
- 2 tbsp olive oil
- 8 oz firm tomatoes thickly sliced
- 5 oz asparagus tips blanched
- 3 1/2 oz large flat mushrooms roughly chopped
- 1 tbsp chopped fresh tarragon
- 5 1/3 oz pack mozzarella drained and sliced
Instructions
- Preheat the oven to 200°C/180°C fan oven/Gas Mark 6. Put the pizza base on a baking sheet and brush with 1 tablespoon of the olive oil. Scatter over the tomatoes, asparagus, mushrooms and tarragon, then season with salt and black pepper.
- Arrange the mozzarella on top, season with more black pepper and drizzle with the remaining oil. Bake for 18 to 20 minutes or until the cheese is lightly browned.
